Tidewater Grain Company Fried Rice

Use this recipe as a guide and add in any vegetables or proteins that you like. It's a great way to use rice leftover from the night before!

Ingredients

  • 2 Tbsp. canola, vegetable or avocado oil
  • 1 small white or yellow onion or 3-4 scallions, diced
  • 2 green peppers, diced
  • 2 cups chopped mushrooms
  • 2 cups shredded fresh spinach
  • 4 carrots, diced
  • Protein of your choice: diced or sliced raw chicken, pork, beef, shrimp or tofu
  • 4 cups cooked Tidewater Grain Company Carolina Gold Rice, white or brown
  • 1/4-1/3 cup soy sauce
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp. dark sesame oil
  • Hot sauce to taste
  • 2 large eggs, beaten

Instructions

  1. Heat the oil in a large skillet or wok. Add onions and veggies and cook until they are soft and lightly sautéed.
  2. Add in your protein of choice. Toss protein with veggies to blend well. Cook, stirring frequently for a minute or two.
  3. Add the cooked rice to the pan and toss well to blend all of the ingredients.
  4. Meanwhile combine the soy sauce, balsamic vinegar, dark sesame oil and hot sauce.
  5. Pour the sauce over the rice mixture and cover the pan for a minute or two.
  6. Add the eggs and stir into the rice.
  7. Season to taste and enjoy.

Notes

Make Pineapple Fried Rice by substituting red bell peppers for the green ones and adding in 2 cups of fresh cubed pineapple. Garnish with minced cilantro.
