GOT TO BE NC Italian Beef and Carolina Gold Rice Soup

Ingredients

  • 1 tbsp oil
  • 1 lb ground beef
  • 1 onion, diced
  • 2 bell peppers, diced
  • 2 carrots, peeled and diced
  • 2 ribs of celery, diced
  • 2 tbsp granulated garlic
  • 1 (28oz) can diced tomatoes
  • 1 (15oz) can tomato sauce or tomato purée
  • 1 qt beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup Tidewater Grain’s Carolina Gold Rice
  • salt & pepper to taste
  • 1/4 c dried parsley
  • grated parmesan, garnish

Instructions

  1. Heat oil in a large pot and brown the ground beef over medium-high heat.
  2. Add the peppers, onions, carrots and celery to the pot and cook for 5 minutes.
  3. Add the tomatoes, tomato sauce, broth, basil, oregano and bring to a boil. Lower heat simmer for 10 minutes.
  4. Add the rice, season with salt and pepper, and cook for 15 minutes.
  5. Mix in the parsley. Garnish with grated parmesan.
