GOT TO BE NC Italian Beef and Carolina Gold Rice Soup

Ingredients
- 1 tbsp oil
- 1 lb ground beef
- 1 onion, diced
- 2 bell peppers, diced
- 2 carrots, peeled and diced
- 2 ribs of celery, diced
- 2 tbsp granulated garlic
- 1 (28oz) can diced tomatoes
- 1 (15oz) can tomato sauce or tomato purée
- 1 qt beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 cup Tidewater Grain’s Carolina Gold Rice
- salt & pepper to taste
- 1/4 c dried parsley
- grated parmesan, garnish
Instructions
- Heat oil in a large pot and brown the ground beef over medium-high heat.
- Add the peppers, onions, carrots and celery to the pot and cook for 5 minutes.
- Add the tomatoes, tomato sauce, broth, basil, oregano and bring to a boil. Lower heat simmer for 10 minutes.
- Add the rice, season with salt and pepper, and cook for 15 minutes.
- Mix in the parsley. Garnish with grated parmesan.
