1 cup your favorite cheddar cheese, grated (or for a fun change of pace, try these with blue cheese, pepper jack or Gruyère cheese)
Dash of hot sauce, if you would like
Pecan halves, optional
Instructions
Blend all three ingredients together in a food processor or with an electric mixer.
Once the mix is smooth, shape into a log, approximately 2" wide and 4-5" long. Wrap the "log" with plastic wrap and freeze for at least 30 minutes to an hour.
Remove the cheese log from the freezer whenever you are ready to bake. Unwrap and cut into 1/4 inch slices. Place each slice on a parchment lined baking sheet.
Bake at 350 degrees for 9 minutes.
Top each slice with a pecan half as soon as you pull the wafers out of the oven to cool.
