Fried Duck Spinach Salad (using Southern Breeze Breader)

Ingredients

  • 1lb tenderized Duck Breast (can sub Chicken, Turkey, Steak, Lamb, Shrimp or Fish)
  • 1 bundle fresh Spinach Leaves
  • Southern Breeze Breader
  • 3 Eggs
  • Crumbled Feta Cheese
  • Olive Oil
  • Vinaigrette Dressing

Instructions

  1. Prepare hot skillet with oil.
  2. Whisk 3 eggs.
  3. Dip duck in egg mixture and then heavily dredge through Southern Breeze breader.
  4. Fry on medium heat; about 1-2 minutes per side.
  5. Allow breast to cool and then slice.
  6. In a large bowl, add spinach, cheese, duck and top with vinaigrette.
