Fried Duck Spinach Salad (using Southern Breeze Breader)
Ingredients
- 1lb tenderized Duck Breast (can sub Chicken, Turkey, Steak, Lamb, Shrimp or Fish)
- 1 bundle fresh Spinach Leaves
- Southern Breeze Breader
- 3 Eggs
- Crumbled Feta Cheese
- Olive Oil
- Vinaigrette Dressing
Instructions
- Prepare hot skillet with oil.
- Whisk 3 eggs.
- Dip duck in egg mixture and then heavily dredge through Southern Breeze breader.
- Fry on medium heat; about 1-2 minutes per side.
- Allow breast to cool and then slice.
- In a large bowl, add spinach, cheese, duck and top with vinaigrette.
